Possibly the easiest dessert ever. Traditionally this old English classic is made with plain meringues and fresh strawberries.
Come summer time, I will definitely be using fresh blackberries.
Blackberry Coulis
2/3 c fresh or frozen blueberries
1/2 tbsp caster sugar
1/2 tsp vanilla extract
1 tsp lemon zest
200 ml whipped cream
1 tbsp Armagnac
3 large meringues, see recipe here - roughly broken up
To make the coulis, place all the ingredients in a small saucepan. Gently heat until sugar dissolves.
Transfer mixture to a blender and gently blitz until smooth and thickened.
Set aside.
Fold Armagnac through whipped cream.
To assemble, layer ingredients in a bowl. Easy.
Serve. Enjoy.
