Cognac and Dulce de Leche Eton Mess with Blackberry Coulis



Possibly the easiest dessert ever. Traditionally this old English classic is made with plain meringues and fresh strawberries. Come summer time, I will definitely be using fresh blackberries. Blackberry Coulis 2/3 c fresh or frozen blueberries 1/2 tbsp caster sugar 1/2 tsp vanilla extract 1 tsp lemon zest 200 ml whipped cream 1 tbsp Armagnac 3 large meringues, see recipe here - roughly broken up To make the coulis, place all the ingredients in a small saucepan. Gently heat until sugar dissolves. Transfer mixture to a blender and gently blitz until smooth and thickened. Set aside. Fold Armagnac through whipped cream. To assemble, layer ingredients in a bowl. Easy. Serve. Enjoy.
