Sorry for two breakfast posts in a row. I actually couldn't help myself with this one. These pancakes are so moreish, I can never just have one (or two, or three...).
Every Monday morning I make something special for Tomi's breakfast. It is my way of saying sorry for working all day Saturday and Sunday. This batch makes 8 smallish pancakes. What we don't eat, I wrap individually and freeze. Just pop in the microwave when you or your little one needs a snack.
Ingredients
1 c plain flour, sifted
2 tsp baking powder, sifted
1/4 tsp salt
1 tbsp caster sugar
1 large ripe banana
1 large egg
1/2 tbsp caramel syrup
2/3 c milk
1 tsp vanilla extract
Maple syrup
Fresh banana
Combine the dry ingredients. Set aside
Mash banana in a bowl. Add egg, caramel, milk and vanilla. Whisk together.
Add dry ingredients and whisk to combine.
Heat a large frypan or hot plate, low-medium. If using a frypan, use a little butter to grease.
Spoon mixture onto hot plate and allow to cook for 2 minutes. The tops should have bubbles on the top. Flip over. Cook for a further 2-3 minutes.
Place on a warmed plate. Cover with a tea towel. Cook remaining mixture.
Serve warm with maple syrup and fresh banana. Enjoy!
