Buttermilk Pancakes with Nutella, Banana, Hazelnuts and Maple Syrup

If you, like me, are on the receiving end of constant rejection well then here is the happy meal for you. It made me feel so much better. Slightly ill because I nailed the whole thing but better in an emotional sense.

On a another note (a non-emotional lady you are a freak note), if you are looking for something special to serve for breakfast be it a birthday, romantic gesture or whatever, again this is the dish for you.

Ingredients

2 large free range eggs

140 ml buttermilk

25 ml milk

85 g butter, melted

2 tbsp sugar

140 g plain flour

2 tsp baking powder

1 large banana

Nutella

Hazelnuts, roughly chopped

Pistachios, roughly chopped

Maple syrup

In a medium sized bowl whisk eggs and milks together.

Continue to whisk and pour in melted butter.

Whisk in sugar.

Add flour and plain flour, whisk together until batter is smooth.

Heat a large crepe pan, frypan or electronic flat pan, over a low to medium heat.

Add a little butter or oil.

Spoon mixture into pan, allow bubbles to cover the whole thing before flipping. Cook for a further few minutes.

Spread each pancake with nutella. Layer pancakes with bananas in the middle.

Sprinkle over nuts.

Drizzle maple syrup.

Serve. Enjoy!
